Six common mistakes to avoid when cooking pancakes – including over-flipping

Get your frying pans ready, because Pancake Day is almost here.

It’s the one day of the year where it’s socially acceptable to have pancakes for breakfast, lunch and dinner.

Unfortunately, many Brits do struggle when it comes to making the perfect pancakes – and there’s a large chance you’ve been doing it wrong.

A study by food box company Gousto last year found that out of every dish in the world we in the UK find pancakes the hardest to get right.

The good news is, if you’ve been cooking pancakes wrong, there are six ways you can avoid the most common mistakes. Here is all you need to know.

1. You don’t have the right equipment

You don’t need specialist equipment to make pancakes, but using the wrong pan can result in bad pancakes.

Make sure your frying pan isn’t scratched, overused or warped if you want to make the perfect pancakes.

The best thing would be to use a non-stick frying pan, and ensure an even heat distribution.

2. You’re cooking at the wrong temperature

Temperature is incredibly important when it comes to cooking pancakes.

Too hot and your pancakes will be burnt on the outside and raw in the middle.

If your pan isn’t hot enough they will take too long to cook and won’t taste right.

Chris O’Neill, executive chef at The Breakfast Club told the Huffington Post: “Never add pancakes to a cold pan. Preheat the pan over medium heat for approximately three minutes [before adding the mixture].”

3. You’re over-whisking the batter

In order to get the lumps out of the batter, many people tend to over-whisk their batter.

This may get rid of some of the lumps, but this can deflate the air bubbles, meaning you won’t have fluffy pancakes.

Patricia Trijbits, founder of London-based specialist pancake house, Where the Pancakes Are, said: “Go gently on mixing everything. Stop before the mixture becomes gluey.”

4. You’re mixing wet and dry ingredients together

One trick to avoid getting lumps is to avoid mixing your wet and dry ingredients together straight away.

Instead, mix your dry and wet ingredients separately, then whisk them together at the end until you get a smooth batter.

By separating them it will be much easier to make a smooth paste, and avoid lumps in your batter.

5. You’re not resting the batter

You may be desperate to feast on your pancakes, but if you have patience it will be worth it.

For perfect pancakes you should allow the batter to rest for at least 10 minutes, or even overnight if you have time.

This will help the pancake batter rise – and you’ll be able to taste and see the difference.

6. You’re flipping the pancakes too much

One of the fun things about Pancake Day is flipping the pancakes – but this is a common mistake.

One flip is okay, but flipping too much can cause your pancake to deflate.

Philip Inzani, owner of 24-hour Polo Bar in east London, told Huffington Post: “This may be controversial, but we don’t flip,. We wait until the pancake mix starts to bubble. We get a spatula and carefully turn the pancake.”
