Home cook’s recipe for roast potato bites sends foodies into a frenzy

A keen home cook has shared his incredible looking recipe for roast potato bites – and fellow foodies love them!

Sam Richards, from Bournemouth, Dorset, regularly posts his delicious recipes on Instagram, @sams_scranz.

He decided to share his most recent creation on Facebook, where a whopping 2,200 people liked the post.

Sam shared a snap of his crunchy, triple cooked roast potato bites, writing: “First attempt at triple cooked roast potato bites .”

Thankfully for us, the 22-year-old also revealed his cheap and easy method.

Sam explained: “Parboil chopped Maris Pipers in a salted sauce pan for 5-7 mins (I cut the potatoes smaller than I usually would for a roast as I was going for smaller bites).

“Drain and fluff in the colander by shaking vigorously.

“Apply to a preheated baking tray with beef dripping, crushed garlic and rosemary (the beef dripping should be sizzling when applying the potatoes).”

He continued: “Once potatoes are on tray, apply; salt, pepper, onion and garlic powered to them.

“In oven on a high heat for around 50 minutes, turning regularly.

“When they look very close to the desired golden brown colour, finish them off in a frying pan with a little oil or butter on a medium high heat for 4-7 minutes.”

The beef dripping, garlic and rosemary all add an extra layer of delicious flavour.

If you’re vegetarian you can use sunflower oil instead.

Sam served his potato bites with a mozzarella, egg, spinach and mushroom quesadilla, but you could have them with a roast.

Or, if you’re feeling cheeky, tuck into them as a warming snack with gravy to dip.

Facebook foodies loved the idea.

One person said: “Wow, that looks amazing – I must try this.”

“I could imagine sitting in a nice pub, pint of real ale, watching the football and eating the whole basket,” added another.

A third fan wrote: “OMG, I would marry this guy based on these potatoes alone.”

Many others said the recipe was “spot on” and the “best they’ve ever seen”.
