We all have our own twists on Christmas dinner whether you serve it with rice (some people do) or enjoy devils on horseback (that’s primes wrapped in bacon).
And, even down to the roast potato seasoning, whether we parboil or not and using goose fat or vegetable oil, we all want the best recipe for this favourite of side dishes.
Well, one man’s hack might have you questioning everything you know…
A chef has made waves by revealing his unusual trick for the perfect roast potatoes as he claims they need mayonnaise to be done right, reports the Mirror.
We have to admit the end results look crispy and delicious.
Influencer and chef Eitan Bernath, @eitan, cooks his roasties by covering them in full fat mayo before sprinkling with seasoning like pepper, garlic, paprika and parsley.
He doesn’t even peel or boil the potatoes.
He then adds them to the oven for just 20 to 25 minutes.
Eitan claims this cooking method makes spuds that are "perfectly soft and pillowy on the inside, crunchy on the outside and full of flavour".
It sounds bizarre, but considering mayonnaise is mostly oil we can see why it works.
And, the thick texture allows the seasoning to stick firmly to the potatoes while cooking.
One TikTok user commented: "I must say I judged at the beginning, didn't trust the process, but now you've got me like…" alongside the hungry emoji.
"People are forgetting what mayonnaise actually is, it 100 percent makes sense," another added.
Other roast potato tricks that we love include sprinkling an OXO cube or soup packet over the potatoes before adding them to the oven.
And, don't forget to use the "seven minute shuffle" if you par-boil your potatoes.
